Chai Concentrate and Chai Latte
Chai Concentrate
This will make 8 cups of concentrate which will then make 16 cups (or one gallon!) of chai latte. Feel free to double or half the recipe as needed. Keeps in the fridge for about 3-4 weeks.
Ingredients
- 25 Cardamon Pods
- 20 Whole Black Peppercorns
- 20 whole cloves
- 4 Star Anise
- 8 Cinnamon Sticks
- 1 Nutmeg
- 60 Grams washed and thinly sliced fresh ginger
- 2 Tbsp Vanilla Extract
- 8 Cups Water
- 300 Grams Brown Sugar
- 25 Grams Black Tea (I use Assam)
Instructions
Crush the spices (in a morter) then toast them in a large pot until fragrant.
Add water and sugar, bring to a boil, then simmer for 10 minutes.
Add tea leaves and contenue to simmer for 5 minutes.
Strein and store in the fridge for 3-4 weeks.
Ingrediant substitutions:
Instead of fresh ginger you can use 60 grams of dried ginger.
For vanilla 1 Tbsp vanilla extract=1/2 tsp vanilla powder=1 vanilla bean cut in half and scraped out
Chai Lattes
Hot Chai Latte
In a small saucepan on high, mix equal parts Chai Concentrate to milk, for instance one cup of each. Stir occationally and be sure not to let boil. When it starts to steam, its ready! Enjoy!
Iced Chai Latte
Fill a cup with ice, then pour in equal parts Chai Concentrate and milk, for instance one cup of each. Shake hard if in a shakable cup, otherwise stir well. Enjoy!
